Packing away the Gelato

•  All gelato must be ‘backed up’ before being put in the overnight storage freezer
• To back it up use the spatula to push the gelato to the front neatly as far as possible, then
• Wipe out the back and outsides of each container with a clean cloth so there is no melted ice cream left, and return to storage freezer.
• Turn off the cabinet and cabinet light (located bottom left of cabinet).  NB There are two switches, one for the light one for the freezer
• Clean the glass front of the cabinet inside and out (it can be lifted up for an easier clean on the inside).
•  Remove anything on top of the cabinet and clean the glass, with glass cleaner and paper towel
• Wipe over all the stainless steel and make sure no ice cream is left over. You will not be able to wipe the inside of the cabinet as it will still be cold, this will be done in the morning.
• Leave the canvas lid up so that the cabinet can air out over night.
