AFTERNOON:

• Check you know what all front counter products are
• Refill cakes & slices
• Clean cake fridge – including glass – wipe out bottom cake shelf
• Clean the area where the tongs sit
• Fold Napkins
• Fold Cutlery
• Clean Microwave & Pie Warmer
• Catch up on any dishes
• Stock the customer drink fridge (check if there are cartons in the arcade)  Water and Coke are upstairs
• Restock sugar, straws
• Refill ice tea & lemonade
• Help with Runner closing jobs

CLOSING:

(If you are closing Friday & Saturday nights, there is a second section you need to complete below

45 mins before closing:

• Put jam tin away, and return ice brick to freezer
• Refill & put bench items in plastic containers
• Refill & put cake fridge items in plastic containers
• Clean Utensils and cake displays
• Put lid back on cream and wash the spoon
• Clear cake bench & wipe
• Place all cakes/slices on shelves into a FRIDGE
• Clear front & side counters & wipe
• Wipe & clean first big sink
• Wipe dishwasher bench & clean sink
• Drain Dishwasher
• Wipe back bench & top of freezer
• Ensure all items are put away – don’t leave utensils, containers, glasses etc
• Empty Bin & Rag Bag

15 mins before closing:

• Ensure both walkie talkies have been put back on their base and the earpieces have been hung on the hook
• Half close door & put juice board away
• Wipe all tables on cafe side

At Close:

• Bring in Open Flag
• Turn off lights and AC in customer area (if all customers are gone)
• Be sure all your orders are completed and closed in Lightspeed – if unable to finalise an order, be sure to type in notes so the next person knows what is happening with it.
• Balance register (see article)
• Make sure iPod & iPads are on charge
• Turn off  over head lights, cake fridge light, back lights & AC
• Close blind on sandwich fridge
• Turn off music
• Clock Out
• WEDNESDAYS – take the commingled bin to the end of the lane way against the NAB wall

FRIDAY AND SATURDAY NIGHTS ALSO DO THE BELOW TASKS

• Finish all dishes & close down dishwasher in KITCHEN
• Take out the last of the rubbish – AND LOCK BOTH BINS
• Turn off lights in kitchen
• LOCK UP CAFE KITCHEN AND ARACDE
