Mopping the Floor

Definition of Floor:  includes every part of the floor, front of house, café, kitchen, dining areas and gelato kitchen.  It also includes under ALL benches, cabinets and equipment on wheels.

When you come to do the final mop of the kitchen areas in the afternoon you MUST get new fresh water.  Run the tap as hot as it will go and add 3 squirts of floor cleaner.  If the water has been sitting in the bucket for any longer than 15 minutes before you do the final mop it needs to be replaced so it is steaming hot.  The back of house areas have very heavy traffic during the day and the dirt becomes ground in.  The floor must be mopped with fresh hot water.  Mopping the floor to an acceptable standard requires the mopper (which is you) to get your back into it.  You will often have to mop over the same area several times to get the dirt up.  You can see if it’s coming up clean as you are mopping.  I like to think of mopping as a great work out for my core muscles.

Particular areas that need attention paid to them (as they are often forgotten) are:

  • under all counters (you really need to bend over and look, ensuring you sweep right from the back of the tiles)
  • in front of the milk & juice fridges (if you open the door and mop in front you can get all the dirt)
  • around the feet of the stainless benches & under the stainless benches
  • under the spare dish racks (items like these on the floor need to be lifted and swept and mopped under)
  • under the milk crate and bin at the Juice/Fruit Fridge (items like these on the floor need to be lifted and swept and mopped under)
  • under the cardboard packaging boxes (next to the cooling rack)
  • the following must be moved out, swept and mopped under every day:
    1. Salad Bar Fridge (kitchen)
    2. Cooks Fridge (kitchen)
    3. Juice (Fruit) Fridge (cafe)
    4. Chest Freezer (cafe)
    5. Barista Milk Fridge (gelato)

Other units that need moving and cleaning under on a weekly basis are as follows:

  1. Dishwasher (cafe)
  2. Glass Door Fridge (cafe)
  3. 3 Door True Fridge in back of café
  4. Upright Freezer in Kitchen

These are all allocated on the week-end jobs list.  Please be sure you are familiar with when these tasks need to be completed.

Once you are finished mopping fill the bucket with fresh water and give the mop a good rinse out.  Ensure you ring it out well before placing back on the hook in the grease trap room.

It’s really important that we have and keep a high standard when it comes to hygiene.  Being diligent about cleanliness:

  • keeps the health department off our back
