What you will need:

• Liptons/Bushells Tea Bags x 15 (in gelato cupboard with kettle)
• White sugar
• Ice tea bucket (use the bucket from the gelato batch processor, ensure it is hand washed and then sanitised in dishwasher before using )

What to do:

Step 1:

• Put 15 tea bags into the large mayo bucket (take the tags off each bag first)
• Use the kettle to boil 8 litres of water (you will need to do 4 or 5 boils)
• Measure into 5 litre Gelato Jug and then pour into the bucket
• Leave tea to brew until cool (or 3 hours)

  Step 2:

• Wait for the tea to cool
• Fill small jug with 1000mls (1 litre) of boiling water
• Add 500 gr of white sugar
• Stir until dissolved
• Add to tea mixture & stir well

Step 3:

• Decent into 5 liter iced tea bottles (makes 2 Bottles) (as the tea bags come out chuck them into the bin)
• Wipe down the bottles and the bench and clean up any mess
• Place in fridge

Cupping up for Customer Fridge:

• Fill MAR bottles with tea and lid
• Place into fridge
• NB: Be sure to place all the new bottles of Iced Tea to the back of the fridge and bring forward any existing bottles to the front

Empty 5 Litre Bottles?

• Rinse inside and outside of empty bottle thoroughly
• Run through dishwasher
• Rinse with cool water
• Leave upside down on stainless dish racks to drain and dry
• Leave lid off to air dry. (It will go mouldy if you do not leave the lid off)
