Barista Closing Checklist

AFTERNOON:

BEGIN THESE TASKS AT 3:30PM

  • Complete fruit prep (be sure to put all containers through dishwasher)  (see article)
  • Clean cold drinks station (don’t forget the wall)
  • Sweep & mop gelato dining room & upstairs (don’t forget to do the stairs)
  • Wipe the exterior of the gelato cabinet top and front with glass cleaner
  • NOTE: break times start at 5:30pm if needed
  • Make sure afternoon Cafe Runner list is completed before 5:30pm & a load of rags need to go on at this time.

8:00pm on Thur, Fri, Sat Nights:

  • Close down the juicer: Bring in juice sign, top up fruit prep, pull apart juicer, wash through dishwasher & sanitise bench.
  • Fill up ice in chest freezer for next day (Always have one full container underneath the basket)
  • FRIDAY AND SATURDAY NIGHTS LATE when there are no customers.  Use leaf blower to blow out arcade and spot mop 

CLOSING:

BEGIN THESE TASK 1 HOUR BEFORE CLOSING

  • Clean your first group head on the coffee machine with chemical.
  • Start backing up gelato (Have completed by 30mins before closing) NOTE: If its really quiet please start 1hr & 30 mins before closing.
  • 45 MINS BEFORE CLOSING
  • Fill up barista milk fridge – wipe out bottom of Double Door Milk Fridge
  • Wipe over all barista benches with spray
  • Empty waste water container under coffee machine and rinse (ENSURE THE HOSE GOES BACK INTO THE CONTAINER)
  • 30 MINS BEFORE CLOSING: Start cleaning second coffee group handle
  • Send all items to the dishwasher: eg milk jugs, group heads, cups, machine grates, knock tube head etc
  • Wipe all customer tables in the coffee area & arcade (communicate that you have done this to the runner)
  • 5 MINS BEFORE CLOSING: Clean your last group handle.
  • Pack away your gelato, turn gelato cabinet to 0, light off & leave blind open (Check the storage freezer is closed properly when finished)
  • sweep & mop behind barista counter & gelato area, ensure you do under the benches (fruit boxes, bins etc from the floor need to be places on gelato bench)
  • any fruit and veg you can fit into the fridge please do so
  • send Nina’s basket upstairs (even if empty) with the runner who takes the rags
  • Empty all Bins:  Milk Bin, Customer Gelato Bin & Arcade Bin
  • ASK YOUR RUNNER TO READ THEIR CHECK LIST – MAKE SURE ALL ITEMS ARE COMPLETED
  • Turn off all lights
  • Turn Off the 2 air Conditioners (make sure the green light goes off)
  • Grab shop keys from upstairs, lock cafe, kitchen & roller doors, put keys back & lock upstairs door. (make sure the light is off)
