- Clean Grease Trap plus Flush on Monday, Wednesday & Fridays
- Collect rags in Kitchen, Cafe and Gelato – run a load in the washing machine
- Clean Salad Bar
- Check Salad Bar Checklist is complete (finish any items that are not done)
- Remove all Waste from Bins and Cardboard from Gelato and Cooling Rack areas
- Sweep and Mop Floors – Ensure al fridges and benches all wheeled out and cleaned under. All fixed benches must be swept and mopped under.
- Turn off all lights (behind stainless upright fridge)
- Run mop over footprints
