Frothing & pouring milk when making coffee

When frothing milk it is important to use the right jug for the right sized coffees. This will reduce waste AND also ensure that you have enough milk for the coffee/s you are making.

JUG CAPACITIES

Small Jug

  • Regular and Large dine-in
  • Latte and Piccolo latte
  • 1 x Regular Takeaway

 Medium Jug

  • 2-3 Regular or Large dine-ins
  • 2-3 lattes
  • 1 x Large T/A
  • 2 x Regular T/A

Large Jug

  • 3 or more Regular T/A
  • 2 or more Large T/A
  • < 3 dine ins

The two smaller jugs:  White is FULL and Black is SKINNY, they make one regular takeaway


Zippy Ties

  • Black = Skinny
  • White = Soy
  • Purple = Zymil

Things to consider

  • Keep your milk wands clean! Purge them and wipe well (including the tip) after every use.  Leaving milk on them and not purging decreases efficiency, increases costs for maintenance and taints the next batch of milk you froth.
  • Rinse your Grey Wand cloth regularly.  Keep it on the drain tray of the machine
  • Only use your Grey Wand cloth for cleaning the milk wand and wiping the side of your cups if you have a shot run over or a spill
  • Get a fresh Milk Cloth after the 11am rush every morning (put dirty one in rag bag)
  • Use a blue cloth to keep the drain tray and stainless bench clean at all times (do not keep this cloth on the drain tray; it should NOT be kept near the milk wand cloth.
  • Restock Lids, Sugars, Cups & Milk Fridge (be sure to stock these in quiet times)
  • Rinse your jugs regularly.  If a jug is empty and you don’t have another coffee in line, stick it in the sink and run the tap over it while you wipe down the benches. Rinsing the jugs regularly decreases the need to Jiff them.
  • If your shot or milk runs down the outside of the cup/glass ALWAYS wipe clean with the Milk Cloth – never deliver a coffee like this.
