This video guides you through the process off backing up and cleaning the gelato containers, and preparing them for the next day.

KEY POINTS

• Check the freezers for any smaller tubs of the same flavour to place into one container at the back
• Use the spatula to push all of the gelato to the front
• Use NEW BLUE Chux Cloth to clean all of the ice cream out of the inside of the container and around the outside lip (place cloth into washing bag when finished)
• Use a container or gelato tin to place the cloth into in between cleaning tins – DO NOT PLACE THE CLOTH ON ANY BENCH OR SURFACE
• Use paper towel to a tea towel to dry the inside of the container
